Slow Cooker Spinach Soup
I don’t know about you, but I do love a hearty homemade soup in winter and this slow cooker spinach soup hits the spot perfectly. There is something about having been out all day and coming home to the aroma of soup simmering away in the slow cooker.
I’ve turned into a bit of a slow cooker fanatic, but I have to be honest and say that it hasn’t always been that way. Oh no. There was a time when I wasn’t so sure about them, and now I wouldn’t be without one. As with everything, it’s a case of trial and error until you get the hang of it.
What is more convenient than slinging ingredients into a slow cooker, at a time that suits, and forgetting about it? This slow cooker spinach soup literally takes minutes to prepare and can cook in as little as four hours on high or as long as you want on low. Perfect, I think you’ll agree?
This slow cooker spinach soup recipe is a family favourite. It can be served ‘chunky’ (not that spinach is very chunky) or can be blended to a smooth consistency, depending on your preference.
I prefer my slow cooker spinach soup served ‘chunky’ with nice, crusty fresh bread.
2.5 Liters (ish)
This slow cooker spinach soup can be served 'chunky' or blended and is perfect for a busy winters day.

Ingredients
- 1kg frozen chopped spinach - defrosted.
- 8 rashers smoked or partly smoked bacon - diced.
- 2 medium onions - finely chopped.
- 3 cloves garlic - crushed or chopped (you can use more or less if you prefer).
- 1/2 a grated nutmeg - you can use ready ground if that's all you have.
- 2 liters warm chicken stock.
- Freshly ground black pepper - to taste.
Instructions
- Fry the bacon until it's nicely cooked.
- Whilst the bacon is cooking layer the chopped onion into the slow cooker followed by the spinach.
- Turn the slow cooker on low just to warm it in preparation for the warm stock. A cold slow cooker may crack.
- Freshly grind some black pepper over the spinach (you can use ground pepper, but it's not quite the same).
- Once the bacon is cooked nicely, sprinkle over the spinach.
- Add the garlic and the grated nutmeg to the stock.
- Pour the stock over the ingredients in the slow cooker.
- Pop the lid on.
- Turn the setting up to high and get on with your day.
Notes
The four hour cooking time is when the slow cooker is set to high. To cook the soup over a longer period just reduce the setting.
If you want your ready in a shorter length of time you can also cook it in a pressure cooker for about ten minutes.
